Baked eggs with spinach and ham

Hi everyone! I hope all of you are well! I have been abandoning my blog as of late but I am determined to get back to it. The beginning of the school year has been a challenge but slowly but surely things are falling into place. All good things take time and it is important to be patient. It is important  to remember is balance. Work is important but you have to balance your responsibilities with things that make you happy, make you feel relaxed or help you to learn something new. Cooking is one of those things which does all the aformentioned things. Plus it has the added bonus of making the people I love very happy! This week´s recipe in my cooking group Cookthebookfridays is baked eggs with kale and salmon. I decided to adapt it a bit because I prefer spinach to kale and I just happened to have a lot of cured ham in the fridge. So, it was certainly a Spanish adaptation! The addition of a lovely garlic and bread crumb topping makes this dish so yummy.

I should tell you that this is a rich dish. I served this for dinner along with a light salad.  It is a wonderful and easy dish to make and you can adapt it nicely. The addition of goat´s cheese is wonderful but I think you can expirement with any cheese you prefer. You can make it ahead of time and reheat it. You could make this in smaller dished and it could be a nice appetizer. I will have to try this with salmon too because it sounds so good!wp-1476981076096.jpg

  1. Hubby and I both loved this one. I only made a small portion in my gratin dish and it was delicious. I plan on making this again next week for both. So good. I like the serving dish that you used, and the end result is beautiful.

    1. Thank you so much! The serving dish is a typical one used in Spain. It is pottery and it really helps to keep the food hot! I would decrease this as an appetizer but keep it this size as a main dish! I want to make this one again too. Those bread crumbs! 😍 Enjoy the rest of your weekend!!

I don’t like kale so thank you for suggesting spinach. I think I could just make the bread crumbs and would be a happy girl.

  4. I love how this one is really a template for different combinations of greens, salty protein, cheese, etc. So many ways to enjoy! The Spanish cured ham sounds especially tasty.

  5. Your dish looks wonderful- almost enough to get me to want to eat it!! But I am not an egg eater and I did not even attempt this recipe as I do not like them. My husband wasn’t even around to practice on!

  6. I like your idea about the ham and spinach. An unbeatable combination! We enjoyed these, but personally I thought that it would be a good jumping-off place for other combinations – like yours! Your photos really convey the deliciousness of your dish!
