Easier than it looks Mediterranaen Crown

Hi everyone! I have to share this recipe with you because it is not only DELICIOUS but it is incredibly SIMPLE to make! I learned how to make it by watching this video my husband sent me. You can watch it  here . Ok, it is in Spanish but you don´t need to be an expert in Spanish to read a few words and put this gem together! My husband saw the video on his Facebook and sent it to me hoping I could try it! It is the first time he had ever done something like that so I figured I would give it a go. I am so happy I did. You can adapt the ingredients that you use as well. I was thinking of using different cheeses or using tomato sauce instead of pesto. I love the flexibility and let´s face it, the presentation is impressive and looks like it was a lot of work, when it really wasn´t.

The ingredients I used were the following:

Two tomatoes

Half a can of olives (reserved a few for grazing ;))

1 package of mozzarella

About half a cup of feta cheese, crumbled

About a cup of homemade pesto  ( Recipe here )

About half of a small zucchini

Oregano

Homemade pizza dough (you can also use the store bought kind to make your life easier if you want!)  (You can check the recipe I use here )

  • How much you use of each ingredient depends upon your tastes.

First, make a ball out of your dough and flatten it out. Place it on a large sheet of parchment paper. Put a soup bowl in the middle. Don´t ry to cut out a circle with the bowl. Just let it make an indentation.

Beginning with the pesto, start arranging your ingredients. Remove the bowl.

Now cut 6 triangles in the center.

Now fold in the outside ring towards the center.Then fold in the triangles.

Glaze over with a beaten egg and arrange the olives on top.

Bake for 25 to 35 minutes in to oven at 180. The time differs depending how large your crown is.

I made this in celebration of the five years since I met my husband. It was definitely a feast worthy of a celebration. Cheers everyone!!

    1. Hi! I hope you like the recipe as much as we do! I bought those vases on a whim as they were on sale. I am so glad I did because I love them too! 🙂 As for the flowers, they are artificial. They remind me of mini hortensias. I like their colour! Thanks again xxxx
