About a week or so ago, I bought cooking apples with the intention of making something. For the life of me, I can´t remember what! (Does that happen to you too?) Well, I found a great recipe for a SIMPLE apple treat that is perfect with tea or coffee. Not too sweet and easy to whip up! I found it on Good Food. I made it this morning and it was lovely!
Dorset apple traybake
Prep: 20 mins
Cook: 50 mins
Ingredients
- 450g cooking apples (such as Bramley or any other tart apple)
- juice of ½ lemon
- 225g butter, softened
- 280g golden caster sugar
- 4 egg
- 2 tsp vanilla extract
- 350g self-raising flour
- 2 tsp baking powder
- demerara sugar, to sprinkle
Method
- Heat oven to 180C/fan 160C/gas 4. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side.
- Note: I did not have a rectangular baking tin. I had a deep,oval shaped one which worked out well.Use what you can but remember that your baking time can vary as a result. (My cake took about an extra 15 minutes)
- Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar. 3 Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.
Enjoy by itself or with a scoop of vanilla ice cream!

Ummmmmm, yuuuummmmmyyyyy. I love apple things, especially with cinnamon. Apple crisp is an all time favorite, with brown sugar (like a good Canadian 🙂 ). Soooooo good. This also sounds great.
I have a request though… 🙂 Do you how many apples (more or less). Also can you tell me the measurements for the sugar and flour in cups. I don’t have a scale. Thanks so much. 🙂

Great and you’re so welcome! Here they are. Apples are about 2 large ones. Butter is a cup. Sugar is 1 and 3/4 cups and flour is 3 1/4 cups ❤❤❤👍👍👍

Love it. Ate about three pieces last night. Eek. I need to exercise self-control. I used brown sugar instead of the white sugar, and instead of the demarara (I’m out of it). I also sprinkle cinnamon on top. It’s delish.
