Hello everyone! I hope all of you are well. I am finding it hard to believe that it is already February and that Pancake Tuesday is tomorrow. I was thinking about this over the weekend while preparing a cake for a cake challenge hosted by my friend Lina over at Lin´s Recipes (Want to know more about the cake challenge? Check it out here ) I was thinking about what pancakes I should make. There are so many types of pancakes. There are traditional pancakes, crepes, galettes and others which I am sure I am not familiar with. It was then that it occured to me. Why not ask my friend Lina to co-host a Pancake Challenge? That way we can all share some fabulous recipes, learn new things and get to know each other more! I have found that by participating in challenges, I feel even more enthusiastic about cooking or baking. I have especially found this to be true because most women I know don´t cook or bake and are not in the least bit interested in these things like I am. My mom shares my enthusiasm but she lives in Andalucia. When I see her, we chat away about our latest endeavours. This is a way of sharing in a more consistent way. So, I would officially like to invite you to participate in this challenge!
Just a little history about why pancakes are eaten on Fat Tuesday.
Shrove Tuesday was the last opportunity to use up eggs and fats before embarking on the Lenten fast and pancakes are the perfect way of using up these ingredients.
A pancake is a thin, flat cake, made of batter and fried in a frying pan. A traditional English pancake is very thin and is served immediately. Golden syrup or lemon juice and caster sugar are the usual toppings for pancakes.
The pancake has a very long history and featured in cookery books as far back as 1439. The tradition of tossing or flipping them is almost as old: “And every man and maide doe take their turne, And tosse their Pancakes up for feare they burne.” (Pasquil’s Palin, 1619).
The ingredients for pancakes can be seen to symbolise four points of significance at this time of year:
Eggs ~ Creation
Flour ~ The staff of life
Salt ~ Wholesomeness
Milk ~ Purity

Interested? I hope so! Here are the rules to participate:
- Yes, you can make more than one recipe. (I am planning to!)
- There will be a link available from the 1st of March until the 4th of March for you to link your posts.
- The list below is a list of suggestions for you to choose from in case you aren´t sure what to do. You can research the recipes, as I plan to do! However if you have a recipe that you would like to enter that has nothing to do with this list, no problem. Just let me know!
- My friend Lina and I will choose a winner. I am participating in the challenge but I have no intention of being eligible to win. I think it will be fun to look at what others have done!
