Easy peasy and super yummy cucumber pickle


This week, my parents are visiting and we will have friends over. So I have been searching for some tapas that I can always have at the ready that anyone can nibble on while have a chat with their beer or wine. I found this recipe on Martha Bernie´s lovely site homethoughtsfromabroad626 If you have a moment, do check out her blog.

I made these yesterday and took them out of the fridge this morning. They taste delicious and I have to agree with asMartha when she says on her page, ¨I have never been so enthusiastic about cucumbers!¨ Seriously, it was hard not to wolf them all down while taking the photo haha!



6 cups unpeeled cucumber, thinly sliced

3 small onions, thinly sliced

1-3/4 cups sugar

2 tablespoons salt

1 cup cider vinegar

Combine cucumber and onion slices in a large bowl.  Mix sugar, salt and vinegar and pour over the cucumbers and onions.  Cover the bowl and refrigerate.  The pickle will be ready to eat in an hour, it will keep more than a week in the refrigerator, but will soon lose its green color.  Yields about 7-l/2 cups.  (Adapted from a recipe by Mary Petersen in Cooking in Minnesota).
