Ingredients
- 2 cups of raw pumpkin, grated
- 1 cup onion, finely chopped
- 3 large eggs
- 6 Tablespoons of flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- Cooking oil for frying.
Instructions
Mix the grated pumpkin and onion.Beat the eggs together and then add them to the pumpkin and onion. Add the salt, pepper and flour and mix well.
Prepare a tray lined with paper towels.
Heat a frying pan on medium heat and pour in a small layer of olive oil. It should coat the entire base of the frying pan. When at the correct temperatura, add spoonfulls of the mixture and press down gently so they are flatter. The size of the spons were tablespoons. Cook for about 3 to 4 minutes on each side or until brown. Remove from heat and place them on the tray lined with paper towels in order to drain.
These are best served warm and are not as good the next day.
