Pumpkin Fritters


As I still have lots of yummy pumpkin left, I am in search of new ways to cook with it! This recipe is easy and super yummy! A friend of mine gave it to me some time back and I love it. Maybe you will too! I warn you that these create a wicked thirst…have a cold beer at the ready haha!

Serves 6


  • 2 cups of raw pumpkin, grated
  • 1 cup onion, finely chopped
  • 3 large eggs
  • 6 Tablespoons of flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Cooking oil for frying.


Mix the grated pumpkin and onion.Beat the eggs together and then add them to the pumpkin and onion. Add the salt, pepper and flour and mix well.

Prepare a tray lined with paper towels.

Heat a frying pan on medium heat and pour in a small layer of olive oil. It should coat the entire base of the frying pan. When at the correct temperatura, add spoonfulls of the mixture and press down gently so they are flatter. The size of the spons were tablespoons. Cook for about 3 to 4 minutes on each side or until brown. Remove from heat and place them on the tray lined with paper towels in order to drain.

These are best served warm and are not as good the next day.

  1. These look so delicious Natascha! I love fritters but never thought to make them with pumpkin. Brilliant!!! Did you see my meatballs with pumpkin in the sauce? Another sneaky way to use it up!
