I made these today and they were a big hit! I adapted the recipe from one I saw on Pinterest. They were so easy to make and I was requested to make them again soon. Good things should be shared so here is the recipe!
Yield: 20-24 pizza
Ingredients:
2 large eggplants, sliced 1 inch thick
24 oz tomato sauce (I used homemade with onion, garlic, basil and oregano!)
20 slices provolone cheese, mozzarella works too [I used Mozzarella]
3-4 oz fresh cherry tomatoes, sliced
1 cup fresh spinach [Frozen is good too]
1/2 tsp salt
Pepper flakes, optional
Directions:
Slice the eggplant and arrange the slices on a tray. Sprinkle with salt and let them sit for about half an hour.Β Then with a paper towel, pat them dry.
Preheat your oven to 425 F.
Brush each slices lightly with olive oil.
Put 1 tablespoon of tomato sauce over each slice. Top with a slice of mozzarella. Arrange the fresh spinach and cherry tomatoes over the cheese and broil for about 15 minutes or until the tops start turning brown. Keep an eye on them because they can burn depending upon your oven and size of your slices.
Sprinkle with salt and pepper and serve.
