Watermelon balsamic pizzas



This is just unbelievable on a day like today when it is 40 degrees outside. (That means it is 104 degrees farenheit). I confess the heat is just exhausting and can make me feel crabby ( There is no air conditioning where I work) but coming home and making this lifted my spirits. It looks beautiful and tastes wonderful. My husband devoured it! I found this on http://pinterest.com




1 watermelon slice, cut 1-inch thick from center of the widest part
1 oz crumbled Feta cheese(I love Feta so I added just a bit more.
5 to 6 Kalamata olives sliced (I used black olives)
1 tsp mint leaves
1/2 tbsp balsamic glaze
* About the balsamic glaze. I made my own which ended up being a little thinner than it was supposed to be. That is not the recipe’s fault. The recipe called for brown sugar but as I did not have enough brown, I added a bit of white sugar. Honestly, I like my result because as it was thinner, the watermelob absorbed it better. 1 cup balsamic vinegar
1/2 cup water
1/4 cup brown sugar

Put all the ingredients in a saucepan.Slowly simmer until it reaches the thickness of a glaze. Stir frequently to keep from burning.When you achieve the glaze consistency, let it cool down.Use to decorate and give a sweet and sour tinge to salads and other Mediterranean food.

Hard not to love this.
