Summer. The perfect time to really enjoy a salad! Ok, if I am honest, I love a salad any time but this one is especially nice. I got to know tarragon only recently. It is similar to anise but much lighter and seems to combine remarkably well with lemon and mustard! I add toasted almonds because I think they add color and extra flavour!
Ingredients: (Serves 4)
500 green beans, bolied and chilled
1 cup of blanched almonds, toasted
Juice of one lemon (My lemon was small and did not yield so much juice so add the juice gradually until you decide it is enough
1 cup olive oil
2 tablespoons chopped fresh tarragon
2 tablespoons Dijon mustard
Salt pepper to taste
Blitz the last 5 ingredients together in a food processor. You can adjust the tastes as you go but these amounts were right for me! Mix into the chilled beans along with the almonds. Serve immediately or keep it in the fridge, covered. We had this the next day as we had leftovers and it was still good!

Simplicity at its best! I love tarragon, especially with chicken and seafood :). This salad is a must try: I never thought of pairing tarragon with green beans 🙂
