Strawberry gazpacho


In terms of a great recipe, this is hands down a favourite of mine. The strawberries add a small touch of sweetness. Just perfect.

Adapted from

500 g strawberries, hulled
1 garlic clove, chopped
1 small onion, chopped
2 cucumbers, seeds removed, chopped
2 tablespoons fresh tarragon
1/4 cup (60ml) balsamic vinegar
1/2 cup (125ml) extra virgin olive oil,   plus extra to serve, if desired
1 cup (250ml) tomato juice
1 teaspoon salt

Put all the ingredients together in a food processor. Chill for at least an hour and serve. You can serve with a drizzle of olive oil, croutons, a piece of strawberry, some chopped fresh tarragon, serrano can be flexible with the toppings! You can also throw in an ice cube or two!
