Mulberry banana loaf

I adapted this recipe from http://allrecipes.com . The original uses strawberries instead of mulberries and both are delicious with this recipe!

2 eggs, lightly beaten
1 cup white sugar
1 cup mulberries or strawberries, mashed
1 cup mashed very ripe bananas
1/2 tablespoon orange zest
1/2 cup sunflower oil
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4teaspoon salt
1/2 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease one 9×5 inch pan.In a medium bowl, mix together flour, baking soda, cinnamon and salt.In a large bowl, combine eggs, sugar, mulberries (or strawberries), bananas, orange peel, and oil. Beat with an electric mixer at medium speed for 2 minutes. Add flour mixture, and stir just until moistened. Stir in walnuts.Bake for 1 hour, or until loaf tests done. Remove to wire rack to cool.

  1. I have never had mulberries and I have never seen them in our grocery stores or farmers market. I will have to keep looking for them!
