Patatas alioli

I doubt that there is a bar in Andalucia that does not have this tapa on the menu. It goes so well with a cold beer.  I will tell you right now that the alioli you find in a jar is just awful compared to something you make yourself. It is worth the effort. Serve this cold and treat yourself to a cold beer to accompany it.  You more than likely deserve it.I have good memories of my mom and I sharing one of these with a cold beer and having quite a few laughs!

Ingredients

4 medium sized boiling potatoes

1 garlic clove, peeled.

Chopped parsley

For the alioli:

1 egg

300g olive oil

Juice of one lemon

Salt

Wash the potatoes and boil them. When they are done, immediately put them in cold water.  The skin will be easier to peel off!

Peel the potatoes and dice them or slice them.

For the alioli:

Crack the egg in a large bowl and add a dash of salt. GRADUALLY pour in the oil and beat using  a hand blender. One you obtain a smooth mixture, add the lemon juice and mix well.  Now add the clove of garlic and blend well until it is completely blended in.

Mix the potatoes and half the alioli in a bowl. Arrange the mixture on a plate.  Use the rest of the alioli to drizzle on the top along with the chopped parlsey.  (Refrigerate if not served immediately.) Sprinkle with a dash of salt and serve.
