Chocolate paté banana oat muffins


I used to be a disaster with muffins. This is because I broke a very important rule: I overmixed. Experience is a great teacher and I learned from both my mistakes and the experience of others. I made these muffins for my husband this morning because he has had a tough week. He has been working especially hard and the other day, no doubt as a result of fatigue, he closed the car door on the tip of his finger. He was in excrutiating pain but he never complained. Poor thing. It was so sad to see him suffering and there was nothing I could do to make the pain disappear. I figured that today I could make him a surprise to make him smile!

Makes 6 large muffins or 12 small muffins.


2 cups flour
1 cup oats
¼ cup white sugar
½ cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
½ cup milk
¼ cup vegetable or sunflower oil
1 teaspoon vanilla extract
1 very ripe banana, mashed
Chocolate paté (Homemade or Nutella)



Preheat oven to 375 degrees
In a medium bowl, mix all the dry ingredients until they are well combined.I used a whisk. In a large bowl, beat egg well and add milk, oil, vanilla and mashed banana. Mix well.Add the dry mixture to the wet mixture and stir until ingredients are just incorporated. DO NOT OVERSTIR. You will find that the mix is not at all liquidy but very thick and almost chunky. Grease your muffin tin with sunflower or vegetable oil and distribute batter evenly among the 12 muffin tins. You can use your fingers or a spoon to gently push the batter in. Fill each about 3/4 full..NOT more.Add a teaspoon of chocolate spread to the top of each muffin.Bake at 375 degrees for 17-20 minutes or until toothpick comes out clean.
