Strawberry pancakes with homemade strawberry syrup


Three years ago today, my husband proposed to me. I was living in Malaga at the time and he in Madrid. I came to visit him for a weekend and I knew he was going to ask! He picked me up from the train station, brought me to his flat where he had a brunch ready with yogurt and freshly chopped strawberries and he popped the question. We were so happy! I immediately called my parents and they were overjoyed. We later went to visit my husband’s family who were very happy for us. My husband’s parents went through a very difficult and painful divorce over 40 years ago but the impact of that divorce came to haunt us. Suddenly the happy congratulations disappeared and we were informed of who could not be invited and why, I was especially informed of inumerable
past wrongs inflicted by this one or that one and overall, I was stunned. Really, I never asked and had no particular interest in knowing! That day taught me a lot of things. It taught me that nobody should take away your joy and if they do, it is because you let them. It also taught me that hurts can last for so long, and can seem as fresh as if they were inflicted just yesterday. It taught me to forgive. It took some time. However, when I looked at the overall picture, I realised that forgiveness was the only option on our part. Nobody took away our joy. I love my husband’s family. Three years after that moment, we are happy and grateful that we are together. I made these for my husband today to let him know that I remember those strawberries he chopped for me, knowing how much I love them.Β  Hope you enjoy them too.

1 cup of plain flour
1 egg
1/2 tsp baking powder
I strawberry yoghurt
1/3 cup of milk (I doubled this amount because my pancake mix was too thick)

Mix all the ingredients together.

Heat a pan on medium heat and melt a bit of butter in it.

Use a ladle to pour the mixture into the pan. Flip after about 39seconds, depending upon pancake size. Mine were medium and I ended up with 8 pancakes.

Flip the pancake over for and remove it after about 15 seconds.

For the strawberry syrup: (From * I halved the recipe and didn’t drain the strawberries πŸ™‚

1 cup water
1 cup white sugar
2 cups strawberries, quartered
Prep 5Β m
Cook 20Β m
Combine water and sugar in a saucepan over medium-high heat; stir until sugar is dissolved. Mix strawberries into saucepan and bring to a boil; boil for 10 minutes. Reduce heat to medium-low and simmer until strawberries are mushy and sauce is thick, about 10 minutes. Strain liquid into a bottle and refrigerate.

  1. I made pancakes only yesterday but next time I do, it will be with that homemade strawberry sauce πŸ™‚
    It looks delicious and I’m craving them now but unfortunately, no strawberries 😦
    Great post altogether though!

        Anyway I made the pancakes! They were delicious, I added whipped cream as well because I’m just greedy ☺️
