Pinchos are a typical tapa in Spain. “Pincho” refers to the kebab like stick that the food is served on. Today was my last day of holidays and I made these to celebrate the end of a really nice week. Am I ready to go back to work? Not really,but in order to enjoy the value free time, one has to work! 😉
Ingredients
24 medium shrimp, peeled
2 tablespoons of extra virgin olive oil 1 large garlic clove
Pinch of salt
Juice of half a lemon
I tablespoon of chopped parsley
Kebab sticks, either metal or wooden.
Assemble the shrimp on the kebab sticks. About 6 on each leaving a little space between them.
Crush the garlic and parsley together, if possible, using a mortar. Add the olive oil and lemon juice.
Baste the pinchos with the oil mixture and set them aside to marinate for about an hour.
You can use a frying pan or an oven. I chose to use the oven because I don’t have a very flat frying pan big enough for pinchos.
Frying pan: on medium high heat, fry the pinchos on each side for 1- 2 minutes.
Oven: Preheat to 250 and cook for 5 minutes. No turning needed!
There you have it! Easy, quick and so delicious. Have a cold beer at the ready because this creates one heck of a thirst!👍
