Green olive bread 🍴🍞⭐

YOU can make this…



With ingredients as simple as these…





Then here we go!


250 grams bread flour
100 grams water
25 grams olive oil
15 grams butter
5 grams salt
1 egg
4 grams fresh yeast or 10 grams dry yeast
125 grams chopped green olives (drained well)
1 tsp rosemary
* 1 beaten egg for coating the bread lightly before baking

In a bowl, combine all the ingredients minus the olives and rosemary.


And begin kneading. Remember, knead carefully and be patient. It doesn’t take long to take shape but don’t beat the crap out of it.;)


And it will look like this.

Then add the olives and rosemary. Make sure those olives are drained well. You can add them gradually or all at once. Looking back, perhaps gradually would be easier.



Incorporate the olives and rosemary well.


And then place it in a lightly oiled bowl. Let it rest, covered for 45 minutes.


Then shape it into a ball. Dust the counter with flour and roll the ball in it. This will smoothen the ball.



Then sprinkle a tea towel with flour.



Place the ball on it. And place it in a bowl. Cover it with a tea towel.



Let it rest until it doubles in volume.

– The rate of rising is affected by temperature. In winter, it rises slower, or not so much. Still, don’t panic.  I let this alone to rise for 2 hours and did not see a dramatic change. However, the texture of the dough was different. More bread like.

Preheat your oven to 200°

Carefully turn over your bread onto the baking tray. You will find that placing the dough on a tea towel and in a bowl will naturally give it a smooth and desireable shape.

Coat the bread lightly with the beaten egg and place it in the oven for 12-15 minutes. Keep an eye on it and cover the top with foil to prevent the top from browning too much. Let cool on a rack.

✳  My husband toasted slices and lightly drizzled them with olive oil. ( He is Spanish and this is a common thing to do with bread here in Spain.) It was wonderful!
